something yummy this way comes
i haven't posted in so long i can't remember how to do it ;/)
the wide world of almond meal has opened up for me, i just love the stuff!
one of my online knitting buddies, Thérèse of Knitfinder shared a recipe for almond cakes, they were delicious, more like a blini than a pancake. i added a little almond milk, baking soda and blueberries, yummy yummy yummy!
Almond Meal Pancakes
1/3 cup Almond Meal/flour
Pinch salt
Pinch baking powder
Pinch baking soda
Big pinch Cinnamon
Orange or Lemon Zest
1 Egg
Splash Unsweetened Almond Milk
Blueberries (optional)
Mix together dry ingredients, add in Egg, add splash of Almond Milk, how much you add depends on how thick or thin you like you panicakes. Add Blueberries if desired, I used frozen Organic Blueberries from Costco.
Melt a dab of Butter in pan, I used a cast iron skillet, pour in batter when Butter is sizzling. Cook until bubbles are almost set, flip.
Serve with Canadian Bacon and Maple Syrup. Yummy :/)

my knitting life has been taken over by hexxapuffs. i am powerless in their squishy goodness.
Tosh Merino Light makes a perfect puff. the tosh colors are so lovely.
